I didn’t go into VeganMoFo deciding to do an Asian theme for the entire month, but given how I’ve been cooking, it may just happen that way. Tonight I made a stir-fry of noodles and veggies with an awesomely savory sauce. Yakisoba noodles are great, they’re yellow and rich in flavor. I’ve seen them at most markets, so they shouldn’t be too hard to find. In this dish are lots of good veggies like Chinese (Napa) Cabbage and rehydrated shiitake mushrooms.
When I read the recipe for the sauce I didn’t think it was going to be very good, but it was actually awesome. The main base for the sauce is Worcestershire sauce and Tomato Ketchup. When I think of those ingredients, I definitely don’t think Japanese, I think (tofu) steak and fries. It took me a while to find a vegan Worcestershire sauce, but the Kroger brand actually skips on the anchovies, so I was able to go with that. This dish came together super quick, just sautee the veggies with some sesame oil, garlic, and ginger and then toss with the noodles and sauce.
